First, place a large pot on medium heat. Once hot, add oil, onion, cumin, and salt. Leaving the pot, take your garlic, ginger, cilantro, and green chilies and grind them into a paste using a food processor. Once you have a paste, add to the pot.
Next you will want to add the coriander, chili powder, and turmeric to your pot, stirring to coat. Then add the pureed tomatoes and chickpeas. At this point you should have a soup consistency, add water if necessary.
Increase the heat to high until the pot reaches a rolling simmer, then reduce heat to low, maintaining simmer for 15-20 minutes until you achieve the thicker consistency of a stew. Taste and adjust seasonings as needed using the salt, chili powder, and coconut sugar.
When you reach desired taste, remove the pot from the heat and add lemon juice and garam masala, mixing in. Let contents cool and you are ready to serve.
