Ginger Zucchini Muffins

Ingredients

  • 1 cup unbleached white flour
  • 1 Tbsp baking powder
  • ¼ cup Drink More Good - Ginger Ale Syrup
  • ⅓ cup sunflower oil
  • ¼ cup Ginger People - Organic Crystallized Ginger
  • 1 cup grated zucchini
  • 2 eggs
  • ½ cup milk
  • 1 tsp salt 

Directions

  • Pre-heat oven to 400 degrees.
  • Combine all the liquid ingredients in a bowl and whisk until blended.
  • In a large bowl, combine dry ingredients and lightly whisk to combine.
  • Pour liquid ingredients into bowl with dry ingredients and stir until barely combined.
  • Fold in zucchini and ginger without over mixing the batter.
  • Scoop into prepared muffin pan and bake for 18-20 minutes until muffins spring back and have a slight golden color to the top.
