. I recognized my own children’s lack of quality food in the morning which is why I came up with this gluten free, dairy free, high protein and fiber muffin recipe.
What I love about this recipe is that it can be prepared as a morning muffin by using cacao nibs, or it can be turned into more of a dessert recipe by substituting the nibs with chocolate chips.
Banana Flax Muffins
- Preheat oven to 350 degrees.
- Mash the bananas in a large bowl.
- Add the remaining ingredients and mix well.
- Bake in well greased (or lined) mini muffin pan for 10 to 11 minutes.
