Breakfast Muffin Recipe That Gets a Thumbs Up From a Health Coach!

Let’s face it. Breakfast is the most important meal of the day, but frequently people eat foods devoid of nourishment. (Cough, bagel and cream cheese, cough)

My name is Laura Deutsch and I am a mom and health coach, and I run the healthy lifestyle website Instillhealth.com and parenting website Mommybites.com. I recognized my own children’s lack of quality food in the morning which is why I came up with this gluten free, dairy free, high protein and fiber muffin recipe.  

What I love about this recipe is that it can be prepared as a morning muffin by using cacao nibs, or it can be turned into more of a dessert recipe by substituting the nibs with chocolate chips.

Banana Flax Muffins

Ingredients:
Instructions:
  • Preheat oven to 350 degrees.
  • Mash the bananas in a large bowl.
  • Add the remaining ingredients and mix well.
  • Bake in well greased (or lined) mini muffin pan for 10 to 11 minutes.
