How to Use the Whole Pumpkin: Part 2

Maybe you recently visited your local farm with your family and came home with a few pumpkins. You spent a night chopping them open, clearing out the insides, and creating a fun and goofy jack-o-lantern. The only question remaining is what to do with the insides of your jack-o-lantern, or the pumpkins that weren’t turned into festive decorations. Below we’ve placed a few of our favorite ways to use the entire pumpkin, no leftovers! Every part of the pumpkin can be used to create tasty treats, useful pantry ingredients, or even a moisturizing face mask.

Roasted Pumpkin Seeds

Once you’ve scooped out the inside of the pumpkin, separate the seeds from the guts (we’ll use those next!), add some seasoning, and roast your own tasty pumpkin seed snack in the oven. Pumpkin Stock

Now that you’ve separated the seeds, you have a few cups of stringy “pumpkin guts.” They can be tough to use, and a lot of people suggest composting it if you have no other use for it. We suggest using it to create your own pumpkin stock! If you’re not sure how it’s done, follow the super easy instructions below from Earth 911. Once created, the stock can be added to soups and casseroles, or frozen for later use. 

Pumpkin stock instructions:
  1. Place the guts in a pot filled with water and boil. You can add other unwanted vegetable pieces, such as celery tips, carrot tops,or other vegetable ends that you would normally discard to add more flavor.
  2. Boil for about 30 minutes, or until the water begins to change color.
  3. Strain your stock, reserving the broth and setting your guts and vegetable pieces aside to be composted.

The seeds and guts aren’t the only deliciously edible parts of the pumpkin.  If you’re looking for a great recipe that uses the meaty part of the pumpkin (that’s also vegan!), look no further. Pumpkin Planters

Not into jack-o-lanterns? Try using your pumpkins as planters for your favorite Fall flowers instead. Just follow these easy instructions from HGTV to create fun, festive decor.

Pumpkin is packed with all sorts of antioxidants and vitamins that can help protect your skin from wrinkles and age spots, and it exfoliates to reveal a brighter complexion. Check out this easy pumpkin face mask recipe from Popsugar, and pull together the ingredients for the perfect night of relaxation. The recipe calls for canned pumpkin, but if you’d rather use fresh, simply place the stringy “guts” of the pumpkin in a blender and blend until creamy.
