In 2006 Jonathan Carp, MD in dermatology, was visiting a friend in Japan when she took him to a Buddhist-run vegetarian restaurant. In 2004 he had a patient that healed herself from lupus through nutritional and lifestyle modification. Fascinated by this restaurant and discovering the health benefits of this amazing plant-based food, he thought how this could translate to his patients in a positive way.

Coming back from his visit, he decided to create Miracle Noodles with his family. Since then, he has treated hundreds of patients through lifestyle modifications, especially nutritional changes with a special interest in auto-immune diseases and additional research in the benefits of konjac plants. Although he still practices medicine, he has the firm conviction that all that ails us today can be solved by going back a few generations and eating better in ways like our ancestors did.
